What it is

Sherry vinegar is vinegar made by fermenting sherry wine from the Jerez region of Spain, then ageing it in a solera system of barrels.

What it tastes like

On the nose: banana, cheesy, buttery. Among its measured molecules: 2-methylpropanoic acid, isobutyl acetate, 2-methylbutyl acetate, diethyl succinate, methyl acetate.
