What it is
Pandan is the long leaf of Pandanus amaryllifolius, a tropical plant used across Southeast Asian cooking.
What it tastes like
On the nose: sweet-floral, fatty, citrus, orange-rose. Among its measured molecules: ethyl salicylate, butyl acrylate, (2E,6E)-nona-2,6-dienal, (z)-4-heptenal, pelargonic acid.
