What it is

Baijiu is a Chinese spirit distilled from fermented sorghum or other grains using a solid-state fermentation starter called qu.

What it tastes like

On the nose: buttery, cheesy, dry, pineapple. Among its measured molecules: ethyl valerate, 2-methylpropanoic acid, ethyl isobutyrate, ethyl laurate, ethyl lactate.
