Pu-erh is a fermented tea from Yunnan, China, made from sun-dried Camellia sinensis leaves that are pressed and aged, sometimes for years.
What it tastes like
On the nose: camphor, fatty, sweet-floral, grassy-green. Among its measured molecules: 1,2,3-trimethoxybenzene, isophorone, (E,Z)-2,6-nonadienal, alpha-ionone, D-limonene.
What goes with it
- Matchaboth carry (E,Z)-2,6-nonadienal, fatty greencite
- Green teaboth carry alpha-ionone, sweet-floral violetscite
- Cilantroboth carry cis-3-hexen-1-ol, grassy-greencite

Unusual pairings
Pairs the library can cite that almost nobody makes.
- Pu-erh + Green tea
both carry alpha-ionone, floral violet (22 of 338 carry it)
- Pu-erh + Watermelon
both carry cis-3-hexen-1-ol, grassy-green (36 of 338 carry it)
- Pu-erh + Cucumber
both carry (E,Z)-2,6-nonadienal, fatty green (9 of 338 carry it)
