Oloroso sherry is a sherry from Jerez, Spain, fortified to a level that prevents flor yeast from forming, allowing oxidative ageing.
What it tastes like
On the nose: whiskey, buttery, almond. Among its measured molecules: syringaldehyde, 1,1-diethoxyethane, diethyl succinate, ethyl lactate, 5-hydroxymethylfurfural.
