Fermented tomato juice
Savory & ferment· ferment vinegar

What it is
Fermented tomato juice is tomato juice preserved by lacto-fermentation, in which naturally occurring bacteria convert its sugars into acids.
What it tastes like
On the nose: buttery, grassy-green, fruity, fatty. Among its measured molecules: 2-isobutylthiazole, 3-methyl-1-pentanol, isovaleric acid, 2-nonanone, 2,3-butanedione.
